1kg Chicken drumsticks (1340 calories) or you could use any chicken portions
For the seasoning:
1/4 tsp curry powder
1/4 tsp all-purpose seasoning
1/4 tsp paprika
1/4 tsp rosemary
1/4 tsp cinnamon
1/4 tsp thyme
1/4 tsp coriander
1 veg oxo (16 calories)
1 thin sliced tomato (12 calories)
1 thin sliced onion (53 calories)
1 thin sliced red and green peppers (71 calories)
Mix all ingredients together and pour over chicken mix properly in a bowl and leave over night to marinate. Pour into a dish cover with foil and cook in the oven for roughly 35 mins at 190°C / Fan 170°C / Gas 5, ensure chicken is cooked through as ovens vary.
Delicious served with rice as all the juices go into the grains.
